Kale for Health: Packing More of This Superfood into Your Office Meals

If you pay attention to the news – or even pop culture – then you know that kale is a superfood to really take over the food market recently. And with that hype, there’s a lot of truth. Kale is a dark, leafy veggie that comes from the broccoli family. It’s packed with fiber, which helps you feel fuller, longer – meaning kale goes beyond just being healthy, but it also helps you better manage your food portions and your weight. It’s loaded with lots of vitamins, including folate, which is really great for brain development (you should add it to your child’s dinner plate!). The benefits of kale go even further – with nutrients like omega-3 fatty acids, lutein, and more, it can actually help protect your eyes from macular degeneration and cataracts.

With all of those benefits, kale certainly lives up to all the press; it’s a vegetable that everyone can benefit from. But incorporating more kale into your weekly diet beyond just adding it to a salad here and there might seem a little difficult – especially when you want to keep your meals super tasty at the same time. To help you find some new lunchtime delivery options that bring some of this superfood to the table, while still maintaining that delicious taste you expect when you order from Waiter.com, we’ve pulled together our four favorite kale orders below!

Incorporating more kale into your weekly diet doesn’t have to mean green smoothies – there are lots of great food delivery options that bring a healthy lunch – kale included – to your office door!

White Bean and Kale Soup

With soups taking over your favorite restaurant menus around town, integrating some of this leafy green into your midday meal has never been easier. This tasty soup is made with a chicken base and includes light pasta, cannellini beans, kale and celery – packing the right balance of vitamins, protein and carbs to keep you full for the entire afternoon. Topped with fresh lemon, parmesan and rosemary, you won’t even notice that your lunch is also super healthy!

Chicken Sausage Chili

Stews and chilis are a great way to pack your lunchtime meal delivery with protein, fiber and vitamins without a ton of excess carbohydrates. This yummy chili subs chicken sausage for the traditional red meat options, leaving you with a protein punch that’s a little healthier, too. Throw in beans, tomatoes and kale – and you have the makings of a meal that will keep your brain powered and extra productive all afternoon long!

Kale and Pesto Pasta

While pasta sometimes gets a bad reputation for not offering enough in the form of nutrients, this particular dish is made with the whole wheat version – meaning you’re getting a nutritious base to a delicious lunchtime meal. Chopped kale, chickpeas, and grilled chicken are mixed into the dish, along with a small dollop of pesto. Loaded with protein, healthy fats, and other vitamins, this is a dish that’s sure to stave off that pasta craving you’ve been fighting all week – while packing some really healthy benefits, too!

Kale Frittata

One of the reasons why we love egg dishes is that they’re really perfect for your breakfast or lunch delivery. And this is a frittata that won’t disappoint. The kale is braised before the dish is cooked, giving it the perfect consistency to meld with the gruyere cheese and cherry tomatoes like they were destined to be served together. It’s a light way to order lunch and fill up for an energy packed afternoon, thanks to the protein-rich eggs and vitamin packed kale. Order this one today – you won’t regret it!

Kale for Healthy Living

Because of its superfood status, some people are a little intimidated by the ‘green’ power of this leafy green. But including more kale into your diet doesn’t have to mean you have to go overboard with messy green smoothies. Choosing delicious lunchtime meals that deliver a great mix of ingredients – including kale – can be an excellent way to get the nutrients you’re craving without missing out on some of the other great things that come along with eating a yummy midday meal.

Unfortunately I can’t stand kale. I substitute spinach and broccoli rabe which I do like. Not quite as good for you, but better than most lunches.

Kale is not only great for you, but it’s incredibly easy to grow and can withstand colder weather. On top of that, if you blend it up and freeze it, it makes an excellent ingredient in smoothies. You can’t even taste it!

  3. I love putting kale in my blender when I make smoothies. I mix in fruit like strawberries, blueberries, bananas, milk, and kale or other leafy green to make something that tastes good and is healthy.

  4. White bean and Kale soup is very big at our house, especially with Italian Sausage or Kielbasa. I’ve started substituting it for spinach is recipes, although I’m still not in love with it in raw form. A super food is a super food afterall.
